1 crushed garlic clove
220g spinach leaves
1 tablespoon while milk
2 tablespooons soft goats’ cheese
2 tablespoons grated Parmesan
1 tablespoon fresh basil
Salt and pepper
Fry spinach in garlic and olive oil.
Leave to cool.
Whisk eggs with milk and add cheeses.
Fold in spinach and basil, season.
Pour into a sandwich toaster set to medium.
Cook for 5-6 minutes.
